Shun Cutlery Expands ‘Dual Core’ Knife Collection

Shun Cutlery has expanded its Dual Core Collection to include three new knife shapes and a knife set. 

Dual Core combines the company’s Japanese bladesmithing traditions with advanced steel technology, Shun said. Each knife features a Damascus blade crafted from 71 alternating micro-layers of VG10 and VG2 high-carbon stainless steel.

The fold-forged construction created the collection’s herringbone pattern while also strengthening the steel’s grain for durability. The alternating steels wear at different rates, which creates microscopic serrations along the cutting edge to retain blade sharpness for longer, the company said. The etched Damascus finish is designed to reduce drag and allow food to release more easily.

The new collection includes:

  • Dual Core 6.5″ Master Utility Knife
  • Dual Core 4″ Paring Knife
  • Dual Core 5-Piece Block Set (featuring the 4″ Paring Knife, 6.5″ Master Utility Knife, 8″ Chef’s Knife, 9″ Combination Honing Steel and 8-Slot Birchwood Knife Block)
