Shun Cutlery Introduces ‘Tomi’ Knives at Williams-Sonoma

Shun Cutlery has introduced the Tomi knife series, a premium knife collection said by the company to reimagine performance through thoughtful design.

The knife series is designed for serious home cooks, professional chefs and knife enthusiasts, according to Shun. It has been designed to feel more comfortable, more controlled and more rewarding throughout every stage of food preparation, the company noted.

At the core of the collection is VG-SPX steel, engineered for improved toughness, corrosion resistance and long-lasting edge performance. It has 74 layers of stainless Damascus cladding and a hand-sharpened 16-degree edge.

A softened spine and heel are designed to reduce pressure during extended prep, while the textured onyx pakkawood handle provides a secure, confident grip, Shun noted. An etched spindrift pattern combines with tschuime hammering to reduce friction and improve food release.
